Serves 4
1 lb boneless skinless chicken breast (uncooked)
2 Cups chopped low carb veggies (zucchini, peppers, onions, broccoli, Brussel sprouts, mushrooms etc)
2 T olive or avocado oil
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
Salt & pepper
Preheat the air fryer to 400 degrees F.
Add the chicken and vegetables to a large mixing bowl and coat with oil.
Add seasonings and toss well to coat.
Spray the air fryer basket with olive oil spray and then working in batches as room allows.
Close the air fryer and cook for 10 minutes, shaking the basket halfway through the cooking time. Continue until you have cooked all of the chicken and vegetables.
Can use a sheet pan in regular oven. Adjust timing as needed for chicken to be fully cooked.
