Mediterranean Spring Reset Bowl

Sometimes the best meals are the simplest ones.

When life feels heavy, I find myself coming back to food that feels light, fresh, and actually helps my body feel better instead of just fuller. Not complicated. Not trendy. Just real food that supports energy, digestion, and that overall feeling of not wanting to take a nap at 2 PM because lunch betrayed you.

This Mediterranean Spring Reset Bowl is one of those easy go-to meals.

It’s packed with fiber, healthy fats, hydration, and enough protein to keep you satisfied without feeling weighed down. It also supports one of the things I talk about often with clients and in my own wellness routine… gut health.

When your digestion is off, everything feels off. Energy, mood, inflammation, sleep, even stress tolerance can all take a hit. Sometimes the answer is not another supplement. Sometimes it starts with giving your body simple, supportive food consistently.

This bowl is one of my favorites because it takes very little effort, tastes fresh, and works as lunch, dinner, or one of those “I refuse to cook but I still want to make good choices” meals.

No wellness Olympics required.

Just real nourishment.

Ingredients

  • 1 can chickpeas, drained and rinsed

  • 1 cucumber, chopped

  • 1 cup cherry tomatoes, halved

  • 1/4 red onion, thinly sliced

  • 1 avocado, diced

  • 1/2 cup feta cheese (optional)

  • 2 tablespoons olive oil

  • Juice of 1 fresh lemon

  • 1 tablespoon red wine vinegar

  • Fresh parsley or basil, chopped

  • Sea salt and black pepper to taste

Directions

In a large bowl, combine the chickpeas, cucumber, tomatoes, red onion, avocado, and feta if using.

In a small bowl, whisk together olive oil, fresh lemon juice, red wine vinegar, salt, and pepper.

Pour over the salad and toss gently until everything is evenly coated.

Top with fresh herbs and serve chilled or at room temperature.

That’s it.

Simple. Fast. Delicious.

And most importantly, your body will probably thank you later.

Because sometimes wellness is not about doing more.

Sometimes it looks like feeding yourself like someone you actually care about.
